5 Butterfly Cakes

The Recipe

Ingredients

  • 100g butter, softened,
  • 100g caster sugar,
  • 2 eggs,
  • 100g self raising flour, sifted.
For the Butter Cream:
  • 50g butter, softened,
  • 112g icing sugar, sifted,
  • 15ml milk,
  • 1 or 2 drops of vanilla essence.

Method

To make the cakes:

    Cream butter and sugar together until pale in colour, light in texture and fluffy, Beat in eggs one at a time with 1 tbsp of flour at a time, Gently fold in remaining flour, Divide mixture equally between 18 paper bun cases standing in ungreased bun tins, Bake at 190 for 20-25 mins or until well-risen and golden, Allow to cool on a wire rack.
To make the butter cream:
    Beat butter until soft and then gradually beat in sugar and milk Continue beating until light and fluffy then chill to thicken
To assemble Butterfly Cakes: Cut a slice off the top of each cake, Cut slices in half to make wings, Place a little butter cream on the top of each cooled cake, Put halved slices into icing at an angle to form wings, Dust with a little icing sugar.
