5 Butterfly Cakes
The Recipe
Ingredients
- 100g butter, softened,
- 100g caster sugar,
- 2 eggs,
- 100g self raising flour, sifted.
- 50g butter, softened,
- 112g icing sugar, sifted,
- 15ml milk,
- 1 or 2 drops of vanilla essence.
Method
To make the cakes:

Cream butter and sugar together until pale in colour, light in texture and fluffy,
Beat in eggs one at a time with 1 tbsp of flour at a time,
Gently fold in remaining flour,
Divide mixture equally between 18 paper bun cases standing in ungreased bun tins,
Bake at 190 for 20-25 mins or until well-risen and golden,
Allow to cool on a wire rack.

Beat butter until soft and then gradually beat in sugar and milk
Continue beating until light and fluffy then chill to thicken
